Baking Pan Frittata

This super simple recipe is great for feeding the family all in one go, or for weekly meal prep—simply sandwich the slices in an English muffin, croissant or your favorite carb for a hearty breakfast on the go!
Ingredients
- 6 cremini mushrooms, sliced
- 1 small red onion, sliced
- 1 tablespoon olive oil
- 3 ounces baby spinach
- Kosher salt, to taste
- Cracked black pepper, to taste
- 6 large eggs
- 2 tablespoons water
Preparation
Sauté the mushrooms and onions in olive oil over medium-high heat for 2–3 minutes, or until the mushrooms have released all of their moisture and the pan is dry. Transfer to a work bowl and set aside.
Add spinach to the same pan, cook until wilted then remove from heat. Press out any excess liquid from the spinach and rough chop. Mix spinach with the mushrooms and onions, then salt and pepper to taste.
Heat oven to 300°F.
Grease a high-sided baking pan with olive oil. Distribute cooked vegetable mixture evenly into pan. Whisk eggs and water together in a small bowl, then add to the baking dish and bake until set, about 15–20 minutes.
Allow to cool for 5–7 minutes, then cut into squares and serve. If meal prepping, cover slices and refrigerate (or freeze) until ready to eat.
