Roasted Pumpkin Seeds

Whether you're carving a pumpkin for Halloween or using the winter squash for a recipe, keep the seeds and get roasting for a simple, savory snack!
Ingredients
- 1 whole pumpkin
- 2 cups water
- ¼ cup plus 2 tablespoons kosher salt, divided
Preparation
Dissolve ¼ cup salt in water to make a brine.
Cut pumpkin in half and remove the seeds (or scoop seeds from the top if carving a jack-o-lantern). Rinse seeds in a colander to remove any bits of flesh, then immerse cleaned seeds in brine for 1 hour.
Preheat oven to 375°F.
Remove seeds from brine and pat dry with a paper towel. Toss seeds with remaining salt and place onto a lined sheet pan.
Roast for 12–15 minutes, until lightly toasted. Remove from oven and allow to cool to room temperature.
