Green Mango Salad

This vibrant, super-refreshing salad imparts the perfect balance of sweetness, savoriness and tartness in each crunchy bite—plus a little spiciness if you opt to add Thai chilies! Serve it as an anytime appetizer or flavorful accent alongside a main dish.
Ingredients
- 1 small red onion, sliced thin
- 1 carrot, peeled and shredded
- 2 unripe green mangos, peeled and shredded
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 2 Thai chilies, chopped (optional)
- 4 tablespoons chopped cilantro
Preparation
Prepare the red onion, peeled carrot and peeled mangos using a mandoline so all the ingredients are roughly the same size. Set aside.
In a medium bowl, combine fish sauce, lime juice, brown sugar and chopped Thai chilies (optional). Mix well.
Add the prepped red onions, mangos, carrots and cilantro to the bowl and toss to combine.
Adjust with more fish sauce, lime juice or brown sugar as desired.
