Cranberry White Bean, Tomato & Shrimp Ragout

Ingredients
- 1 cup dried cranberry white beans
- 2 garlic cloves
- 1 lb. San Marzano tomatoes
- ¾ lb. shrimp, peeled and deveined
- 6 tablespoons extra-virgin olive oil
- 8 leaves fresh basil
- ½ bunch fresh parsley
- Kosher or sea salt and cracked black pepper to taste
Preparation
Soak beans overnight; drain and cook beans in water with bay leaf and garlic. Reserve a ¼ cup liquid for later.
Cut tomatoes into quarters; chop garlic, parsley and basil leaves. In a sauté pan, heat olive oil. Sauté shrimp until almost cooked and remove. Next, add cooked beans and garlic to sauté pan. Add tomatoes, sauté for 1 minute, return shrimp to pan, and add ¼ cup of the bean liquid. Heat shrimp until cooked. Add basil and parsley. Salt and pepper to taste.
