Broccoli Cheddar Soup

Preparation
Bring a pot of salted water to a boil. While the water heats, cut broccoli into small florets close to the bud clusters, then cut the stems into ½-inch pieces.
Add broccoli to the boiling water, cover with a lid, and boil for 3–4 minutes, or until the florets can be easily pierced. Remove broccoli and place in a blender with about half of the hot broccoli water.
Blend thoroughly until smooth, then add grated cheddar and continue blending to incorporate air, giving it a frothy texture and full-bodied appearance. Season to taste with salt and pepper.
Serve immediately, garnished with green onions, pepper, and grated white cheddar.
