Marinara Sauce

Mix up this chunky marinara for a tasty tomato sauce that can bring out the best in everything from pasta and meatballs to eggs and shakshuka.

Preparation
Heat olive oil in a 4-quart sauce pot. Add onion, carrot, celery, and garlic and sauté for 8–10 minutes, until the onions begin to caramelize.
Add the tomato paste and cook for 3–4 minutes to brown the paste. Deglaze with red wine and reduce to a light syrup, 8–10 minutes.
Add the canned tomatoes, thyme, oregano, and bay leaf. Partially cover with a lid and simmer gently for 2 hours, stirring occasionally.
Remove and discard bay leaf, then puree sauce with a hand blender to desired consistency. Add basil and simmer for 5 minutes. Season with salt and pepper to taste before serving.
