Nan's Tomato Gravy

This rustic, creamy tomato sauce is best served hot with crusty bread or over rice as a flavorful finish.

Preparation
Melt the butter in a large skillet over medium heat. Add onion and sauté until soft, about 3–5 minutes. Whisk in the flour and cook, stirring constantly for 2–3 minutes, until it resembles peanut butter.
Slowly whisk in the milk to avoid lumps, then stir in the tomatoes with juice. Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 5–7 minutes, stirring occasionally, until gravy thickens enough to evenly coat the back of a spoon.
Season with salt and pepper before serving.
