Sage Cheddar-Stuffed Chicken Breast

For an elegant and delicious meal, try stuffing chicken breast with sage cheddar.
Ingredients
- 1 pound sage cheddar
- 4 boneless skinless chicken breasts
- Kosher or sea salt to taste
- Cracked black pepper to taste
- 2 tablespoons extra virgin olive oil
- 1 small jar marinara sauce
Preparation
Preheat oven to 400ºF.
Cut cheddar lengthwise into 4 equal pieces. Slice a horizontal opening into the thickest end of each chicken breast, wide and deep enough to insert the entire length of cheese. Place one cheese piece inside each chicken breast. Season with salt and pepper.
Heat olive oil in an oven-safe skillet over high heat. Sear chicken on both sides. Remove pan from heat, then pour marinara evenly over the chicken in the pan. Transfer skillet to oven and bake for 20-30 minutes.
Remove promptly; let sit 5-6 minutes and serve.
