Baby Root Vegetables & Red Potatoes

Ingredients
- ¼ cup butter
- 1 tablespoon fresh thyme
- 16 baby carrots
- 16 baby turnips
- 8 baby kohlrabi
- 8 baby red (purple) kohlrabi
- 16 small red potatoes, blanched and halved
- 1 cup chicken stock
- Kosher or sea salt and cracked white pepper to taste
Preparation
Melt butter in a sauté pan. Add fresh thyme, vegetables and potatoes. Toss to coat with butter; cook for 3-5 minutes. Add chicken stock and cover pan for 2-3 minutes; uncover and cook for an additional 5 minutes. Salt and pepper to taste.
Great teamed with roasted lamb.
