Apple & Berry Soup

Serve this sweet, tart and refreshing chilled soup during brunch with fresh mint and a dollop of tangy crème fraîche or goat milk yogurt for the finishing touch.
Ingredients
- 4 Granny Smith apples
- 1 pint blueberries
- 1 pint strawberries
- 2 cups cranberry juice cocktail
- ½ cup granulated sugar
- ¼ cup lemon juice
- Mint sprigs, for garnish
- Crème fraîche or goat milk yogurt, for garnish
Preparation
Peel and chop apples. Trim tops from strawberries.
In a medium-sized stock pot, combine fruit and cranberry juice cocktail and place over medium heat. Bring to a low boil and whisk in sugar until dissolved. Lower heat to a simmer and cook for 20 minutes. Soup should thicken slightly.
Process in a blender until completely smooth, then pass through a fine mesh strainer to remove any berry seeds. Stir in lemon juice. Transfer to refrigerator and chill overnight.
Serve garnished with a sprig of mint and a dollop of crème fraîche or plain goat milk yogurt.
