Pork Lettuce Wraps

Ingredients
- 2 pork tenderloins
- ¼ cup low-sodium soy sauce
- 1 tablespoon molasses
- 1 teaspoon ground mustard
- 1 teaspoon garlic powder
- ¼ teaspoon ground pepper
- 8 leaves butter lettuce
- 1 large carrot, julienned or shredded
- ½ package alfalfa sprouts
- 1 cup cashews, chopped coarse
- Garnish with your favorite Thai-style Hot Sauce
Preparation
Stir together soy, molasses and seasonings, then transfer to a sealable plastic bag; add the tenderloin and marinate for 30 minutes.
Preheat the grill to medium-high. Indirect heat will be used to grill the pork - bank coals off to the side or keep one burner off.
Grill pork on the hot side of the grill until it turns a dark golden brown - do not walk away during this step as the sugar in the marinade can quickly burn. When browned on both sides, about 4 to 5 minutes per side, transfer pork to the unheated portion of the grill and finish grilling for 12 to 15 minutes or until the pork reaches an internal temperature of 140º. Remove from heat and let stand 10 minutes before slicing into matchstick-sized strips. Mix pork with chopped cashews.
Divide pork-and-cashew mixture evenly among lettuce leaves. Top with sprouts and shredded carrots. Gently roll lettuce leaves around filling and arrange on platter. Chill in refrigerator or serve immediately.
