Bison Sliders with Brioche Buns

Known as America's "original red meat," bison makes a great base for hearty party sliders like these.
Ingredients
- 1 pound ground bison
- 1 egg
- ½ cup panko bread crumbs
- 1 teaspoon garlic powder
- ¼ teaspoon ground mustard
- 1 large handful of arugula
- 2 Roma tomatoes, sliced
- 1 small red onion, sliced
- 9 brioche rolls, halved
Preparation
In a work bowl, mix together bison, egg, panko, garlic powder and mustard until well-combined. Portion mixture into 9 patties, then arrange on a sheet pan and refrigerate 1 hour.
Preheat oven to 425°F.
After patties have chilled, place sheet pan in preheated oven and bake 10–12 minutes. Remove promptly and assemble sliders with arugula, tomatoes and onion on brioche rolls.
