Lemon Herb Chicken

Both light and flavorful, this simply delicious chicken preparation may become a regular in your recipe rotation.
Ingredients
- 4 boneless skinless chicken breasts
- 2 tablespoons fresh thyme, rough chopped
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 2 tablespoons extra virgin olive oil
- Salt and pepper, to taste
Preparation
Preheat oven to 425°F.
Combine thyme, garlic, lemon zest, lemon juice, olive oil, salt and pepper on a sheet pan to create a light paste. Roll each chicken breast in the mixture and leave on the sheet pan to marinate for 20 minutes.
Place pan with chicken in the oven for 10–12 minutes, or until the internal temperature reaches 165°F. Allow to rest for 5 minutes before serving.
