Classic Greek Salad

Ingredients
- 1 Head romaine lettuce
- 1 English Cucumber
- 4 Roma tomatoes
- 1 Red Onion
- ¼ cup kalamata olives, pitted and halved
- 3 oz. Red wine vinegar
- ½ cup extra virgin olive oil
- 1 teaspoon cracked black pepper
- ½ teaspoon salt
- 4 oz. Feta cheese
Preparation
Rinse and drain lettuce. Tear lettuce into bite size pieces. Cut cucumber into quarters then with a knife laying flat, slice off the seeds. Slice the seeded cucumbers on a bias 1/4 inch thick into 1 inch lengths. Core tomatoes, then slice each one into six wedges. Julienne the red onion. Combine all of the vegetables into a mixing bowl. Add the olive oil and vinegar and toss well. Season with salt and pepper and transfer to a serving dish. Garnish with crumbled feta cheese.
