This spectacular salad is true crunchy bliss! With a heavenly harmony of flavor, it's as easy to enjoy as it is to make.
Ingredients
Salad:
- 1 cup spinach
- 1 cup radicchio, chopped
- 1 cup endive, chopped
- 5 carrots, shaved
- 8 snowpeas
- 1 red bell pepper, julienne
- 1 green bell pepper, julienne
- 7 mandarin oranges, segmented
- ¼ cup cashews, chopped
- ¼ cup crunchy chow mein noodles
- ¼ cup Soy Sesame Dressing
Soy Sesame Dressing:
- 3 tablespoons hoisin sauce
- 1 teaspoon sesame seeds
- 1 tablespoon sesame oil
- 1 teaspoon shallots, minced
- 3 teaspoons soy sauce
- 2 teaspoons rice wine vinegar
- 1 tablespoon honey
- 2 teaspoons orange juice
- 1 teaspoon ginger, minced
- 2 teaspoons cilantro, minced
- 2 teaspoons green onion, chopped
- 1 garlic clove, minced
- 1 teaspoon dry Sherry wine
- ¼ cup salad oil
Preparation
For the salad, prepare and combine all ingredients in a large bowl.
For the dressing, combine all ingredients except for salad oil in a work bowl. Slowly add salad oil while whisking constantly.
Add the dressing to the salad and toss lightly to combine.
