Shrimp & Grapefruit Spinach Salad

Ingredients
- 3 tablespoons Champagne vinegar
- 2 teaspoons Dijon mustard
- ½ cup olive oil
- 3 grapefruits, segmented
- 30 jumbo shrimp, cooked
- ½ red onion, julienne
- 16 ounces baby spinach, washed and ready to eat
Preparation
In a large work bowl, whisk together vinegar and mustard. Slowly add oil while whisking to emulsify the vinaigrette.
Add grapefruit segments, shrimp, onion and spinach to the vinaigrette. Toss well and serve.
