Candy Corn Gelatin Shots

For the love of candy corn! These simply adorable gelatin shots are a fun, easy and festive treat perfect for any party and while they pack a punch, they taste divine.
Ingredients
- 8 navel oranges (halved and hollowed)
- 1 box of orange Jell-O
- 1 ½ cups water
- ½ cup coconut milk
- 1 envelope of Knox unflavored gelatin
- ¼ cup sugar
- 1 ½ cup Coconut Vodka
Preparation
Begin by prepping your molds (orange rinds): Wash the outside of the oranges, slice in half and hollow out the fruit using a pairing knife to score and then scoop out with a spoon—be careful not to puncture the rind.
Layer 1:
Bring one cup of water to a boil and stir in the packet of orange Jell-O. Once the Jell-O has dissolved, mix in one cup of vodka and stir. Pour mixture into orange peels (this should fill the oranges approximately 2/3 of the way up). Chill for at least 2 - 3 hours in the refrigerator until the layer is firm.
Layer 2:
Pour 1/2 cup water and 1/2 cup coconut milk into a sauce pan and mix in 1 packet of Knox gelatin. Let mixture sit for one minute and stir until disolved over medium heat. Add 1/4 cup sugar and continue heating until dissolved. Turn off heat and let mixture cool until warm and add 1/2 cup of vodka. Pour mixture into oranges, filling to the top and let refrigerate overnight.
Quarter the orange halves with a sharp (this is key) knife.
*For a non-alcoholic version use water in place of vodka.
