Grilled Artichokes

This is a delicious way to serve artichokes and it makes a great appetizer that you can serve with a variety of dips.
Ingredients
- 2 large artichokes
- 1 lemon, cut in half
- ½ cup olive oil
- salt and pepper to taste
Preparation
Bring a large pot of water to a boil. Trim the tops from the artichokes, cut in half lengthwise, and add artichokes to boiling water. Simmer artichokes for 15 – 20 minutes until tender, then drain. Preheat grill to medium-high heat. Combine the juice from the lemon with the olive oil and brush on the artichokes, then place them on the preheated grill. Grill the artichokes for 5 – 7 minutes, basting with olive oil and lemon juice mixture frequently.
