Perfect Pickles

Ingredients
- 4 dozen pickling cucumbers (pickling cucumbers are cucumbers that are 3-4 inches long)
- 1 bunch dill
- 1 quart cider vinegar
- 8 cups water
- ½ cup kosher salt
- ½ cup pickling spices
Preparation
Wash the cucumbers and remove any stems. Cover cucumbers with cold water and refrigerate for several hours or overnight. Pack the cucumbers into pint jars as tightly as possible. Pack in 2 sprigs of dill. Bring the cider vinegar, water, salt and spices to a boil. Boil for 2 minutes. Pour the hot brine into the jars and seal. Refrigerate for 72 hours. After 72 hours, the pickles can be eaten immediately and should be kept in the refrigerator for optimal texture and flavor.
