Our slow-roasted picnic shoulder roast is sure to please even your most discerning carnivore and is versatile enough for virtually any accompaniment.
Ingredients
- 1 Pork Picnic Shoulder roast
- 2 teaspoon brown sugar
- 2 teaspoon kosher salt
- 1 teaspoon dried tomatoes, chopped fine
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon vinegar
- 1 teaspoon soy sauce
- 1 tablespoon Fresh To Market olive oil
Preparation
Preheat oven to 350° F. Combine all ingredients except for pork in a work bowl, then rub roast evenly with seasoning mixture. Place roast into a roasting pan and cover with aluminum foil, then place roasting pan into the oven. Roast covered with foil for 3 hours, uncover and roast an additional 30 minutes until the skin is golden and crispy. Remove roast from the oven, cover loosely with foil, let rest 10-12 minutes, then serve.
