Short Bread Pesto Coins

Simple but impressive, these small bites are a unique snack or party appetizer. All the taste of basil pesto in bite sized shortbreads.
Ingredients
1 cup butter softened
8 oz block Pecorino romano; shredded
3 Garlic cloves minced
½ cup pinenuts; toasted
1 tablespoon chopped basil
2 cups flour
¼ cup pinenuts for garnish
Preparation
Pre-heat oven to 350 degrees. On a baking sheet that has been foil lined spread out pine nuts in a think layer. bake until lightly browned; about 8-10 minutes. In medium mixing bowl combine softened butter with shredded pecorino romano. slowly mix in flour by hand until smooth. Add in remaining ingrediants. Flour a cutting board; take small portions of the dough and roll into a logs. Wrap logs in plastic wrap and refrigerate for 8 hours. Once chilled, take logs out and slice aproxamently 1/3 inch thick slices. Bake on a lightly greased baking sheet for 15-20 minutes. let cool once done baking.
