Ingredients
1 ½ pounds Yukon gold potatoes; peeled and Quartered
½ Teaspoon salt
4 Tablespoons Heavy cream
2 Tablespoons Butter
1 Tablespoon milk
1 cup Cotswold, shredded
½ cup Bacon bits or fresh crumbled bacon
Salt and Pepper
Sour cream
Preparation
Put Potatoes into a medium sauce pan. Add 1/2 Teaspoon salt, Then add water until potatoes are covered. Bring to a boil. Reduce heat and simmer, covered for 15-20 minutes or until fork can easily be poked through them. Warm Heavy cream and melt butter in microwave or in sauce pan on stove top. Drain potatoes. Place potatoes in a bowl, Add warm Heavy cream and butter mixture. Use Potato masher to combine ingredients. With strong spoon add in Cotswold and Bacon, mix until blended. Careful to not over mix the potatoes, as they may become gluey. Add Salt and pepper to taste. Top with Sour cream.
