Ingredients
- 3 lbs. table salt
- 1 lb. curing salt
or
- 4 lbs. sea salt
- 1.5 lb. brown sugar
- 5 gallon water
- 2 oranges, quartered
- 1 bunch sage
Preparation
Methods of Curing
Dry cure
Product is rubbed with curing agent and allowed to absorb, 1.5 lb./day
Rub “spent” after 5 days
Usually smaller product
Inconsistent, especially when product is irregular shape

Two common methods
Immersion
Product is submerged 1 day per 1.5 lb.
