Rib Roast Rolls

These rolled beef appetizers will have everyone running back for seconds!
Ingredients
- 1 lb. beef ribeye, seared meduium-rare and sliced thinly
- 1 portabella mushroom cap, roasted, chilled and cut into battons
- 2 oz. radish sprouts
- 4 oz. gorgonzola dolce
- 12 sprigs chives, blanched
Preparation
1. Assemble your rolls by laying out sliced beef onto a work surface, then placing a mushroom batton, a small pinch of spouts and a teaspoon of gorgonzola centered on the slice. 2. Finally, roll into a bundle and tie with a blanched chive.
