Mason Jar Chili & Biscuit

Ingredients
Biscuits
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 4 tablespoons butter, cubed
- ⅓ cup milk
Chili
- 1 tablespoon vegetable oil
- 1 large onion, chopped
- 2 garlic cloves, chopped
- 1 pound ground beef
- 2 ounces tomato paste
- 2 tablespoons chili powder
- 1 tablespoon chopped canned chipotle peppers in adobo sauce
- 1 can diced tomatoes in juice
- Kosher salt and ground pepper to taste
- 1 can kidney beans, rinsed and drained
- 4 mason jars
Preparation
Preheat oven to 325° F.
For the biscuits, combine flour, baking powder and salt in a large bowl. Cut butter into mixture and combine to a consistency that resembles cornmeal. Slowly add milk to mixture and knead dough with your fingertips until dough forms. Separate dough into 4 eqaul parts and set aside.
For the chili, heat oil in a Dutch oven over medium-high heat, then add onions and garlic. Sauté for 2-3 minutes, then add ground beef and continue to sauté for another 2-3 minutes. Add remaining ingredients, mix well, then cool.
Spoon chili into 4 Mason jars, top with biscuit dough and bake for 12-15 minutes at 325° F or until buscuit is golden brown and the chili temperature is 160° F.
