This classic chilled tomato and cucumber soup is packed with flavors but light on calories. One try and you'll be hooked.
Ingredients
- 1½ pounds vine ripe tomatoes, chopped
- 1 cucumber, peeled and seeded
- 1 red bell pepper, chopped
- 1 small red onion, chopped
- 1 jalapeño, seeded
- 1 garlic clove
- 1 lime, juiced
- 2 teaspoons balsamic vinegar
- Kosher salt and pepper, to taste
Preparation
Combine all ingredients and puree with an immersion blender until smooth. Chill one hour before serving.
