Slammin' Salmon

Ingredients
- 2 pounds salmon fillets, skin on
- ½ cup extra virgin olive oil
- 1 lemon, sliced
- 2 teaspoons kosher salt
- 2 teaspoons fresh cracked pepper
- 2 whole garlic cloves, smashed
- 6 parsley stems
Preparation
For the marinade, combine olive oil, lemon slices, salt, pepper, garlic cloves and parsley stems.
Place salmon skin side up in marinade and refrigerate for 6 hours.
Preheat grill to 400°F.
Remove salmon from marinade and pat away any excess oil. Place salmon skin side up on grill over direct heat and cook for 4-6 minutes. Gently flip fillets and continue grilling flesh side up 4-6 minutes, or until a probe thermometer inserted in the thickest part reads 145ºF.
