Beet & Kale Crisps

Ingredients
- 2 bunches green kale
- 3 tablespoons canola oil
- 2 golden beets
- 2 red beets
- 3 teaspoons fine sea salt
Preparation
Preheat oven to 400 F.
Remove stems from kale, rinse and spin/pat dry and coarse chop. Toss kale in 1 tablespoon oil, place onto a sheet pan and bake at 400F for 7-9 minutes or until crisp yet bright green. Remove from oven, season immediately with 1 teaspoon salt and cool.
Peel beets and slice thinly on a mandoline. Toss beets in 2 tablespoons oil, place onto a sheet pan and bake at 400F for 12-15 minutes or until crisp (bake the two colored beets seperately, otherwise the color of the red beet will bleed into the golden beet). Remove from oven, season immediately with 1 teaspoon salt and cool.
