Autumn Mulling Spice

Bring autumn indoors by making your own mulling spice pouches for your gatherings or to give as a unique gift.
Ingredients
- 4 whole nutmeg
- ½ cup cardamom pods
- ¼ cup fresh orange peel
- ¼ cup fresh lemon peel
- ¼ cup ginger root (sliced)
- ¼ cup whole cloves
- ¼ cup allspice berries
- 2 vanilla beans
- sweet cinnamon sticks
- star anise (optional)
- Cotton drawstring bags or cheesecloth.
Preparation
Put nutmeg and cardamom pods into a thick plastic or cloth bag, and whack with a mallet or heavy rolling pin to break into pieces. You can also use a food processor or a spice grinder, taking care not to grind too fine. Add nutmeg/cardamom mixture to a bowl and add orange peel, lemon peel, ginger root, cloves, and allspice berries. Scrape the inside of the vanilla beans to remove vanilla roe paste, and add to spice mixture. Mix to combine. Take about 1/4 cup of mulling spice mixture and add into a cotton drawstring bag or cheesecloth wrap (add 1-2 star anise if desired), and tie well. Use bag to flavor bowls of wine, cider or punch. Add 1 or 2 cinnamon sticks to punch bowl, if desired.
