Roasted Kalettes with Garlic, Pine Nuts & Parmesan

Ingredients
- 15 ounces Kalettes
- 2 heads garlic
- 4 tablespoons extra virgin olive oil
- 2 lemons, zested and juiced
- 2 ounces Parmesan cheese, shredded
- 2 tablespoons pine nuts, toasted
- Sea salt and fresh cracked pepper to taste
Preparation
Cut top off of garlic heads, then drizzle exposed areas with 1 tablespoon olive oil. Wrap garlic in aluminum foil and place into 400° F oven for 15 minutes.
Raise oven temperature to 450° F.
Toss Kalettes in remaining oil, then place flat onto a sheet pan lined with parchment paper. Roast for 8-10 minutes or until golden brown with the edges charred.
Remove Kalettes and foil-wrapped garlic from the oven and set aside. Once cool enough to handle, unwrap foil, remove garlic and squeeze out roasted garlic cloves onto Kalettes, then sprinkle with lemon zest.
Combine with remaining ingredients in a bowl and toss gently. Serve while still warm.
