Spiralized Zucchini and Carrot "Pasta"

Spiralized veggies are a delicious, fun and easy twist on typical pasta. Enjoy this light, ratatouille-esque recipe on its own or with crusty bread and roasted chicken.
Ingredients
- 2 teaspoons extra virgin olive oil
- 1 clove garlic, crushed
- 1 teaspoon oregano
- 8 ounces tomatoes, crushed
- 1 teaspoon kosher salt
- 1 teaspoon cracked black pepper
- 2 zucchini
- 1 carrot
Preparation
Heat oil in a small sauté pan, add garlic and oregano and sauté for 1 minute. Add tomatoes, salt and pepper and simmer for 5-7 minutes.
In a separate pot, bring water to a boil. Spiralize vegetables using an OXO Spiralizer, then blanch.
Serve "pasta" with warm sautéed tomatoes.
