Asparagus with Prawns, Sambal Oelek, Roasted Mushrooms & Garlic

This spicy, Asian-inspired side brings out the best in asparagus, mushrooms and prawns. Enjoy alongside a sweet, spicy or savory beef dish!
Ingredients
- 1 portobello mushroom
- 2 tablespoons sesame oil
- 1 tablespoon rice wine vinegar
- 1 lemon, sliced
- 8 ounces 31-40 count shrimp, peeled and deveined
- 1 pound asparagus
- 4 cloves roasted garlic, chopped
- 2 teaspoons Sambal Oelek
Preparation
Slice portobello mushroom in half, then into bite-sized slices. Toss in 1 tablespoon sesame oil and place into 400° F oven for 10-12 minutes or until the slices have browned slightly. Drizzle hot mushroom slices with rice wine vinegar, toss and set aside to cool.
Heat 1 gallon of salted water with lemon slices to 180° F, then poach prawns for 1 minute or until just pink. Set aside.
In the same water, blanch asparagus until bright green and tender, about 3-4 minutes.
Combine asparagus, mushrooms and prawns. Top with garlic, Sambal Oelek and drizzle remaining oil to finish. Serve warm.
