Yogurt & Horseradish Glazed Copper River Salmon

Sweet, sour and spicy glaze adds an extra dimension to salmon.
Glaze has similar flavor profile to horseradish sauce served with prime rib but adapted for grilled fish.
Ingredients
- 4 each 6 oz. copper river salmon filets
- 2 T. yogurt, plain
- 1 T. horseradish, prepared or freshly grated
- 1 T. honey
- 1 T. lemon juice
- 1 T. basil, chiffonade
- Salt and Pepper to taste
Preparation
Preheat grill or grill pan.
Season the salmon with salt and pepper.
Mix the yogurt with the horseradish, honey and lemon juice in a small bowl until smooth. Set aside.
Place salmon filet on the grill and cook approximately 3-5 minutes, creating diamond grill marks.
Flip the salmon, brush with enough glaze to coat, and finish cooking approximately 3-5 minutes.
Remove from heat, top with the basil and serve immediately.
