Macadamia Nut-Crusted Mahi-Mahi with Red Curry Sauce

Rich macadamia nuts and spicy Thai curry sauce take this mahi-mahi masterpiece to the next level.
Ingredients
- 4 mahi-mahi fillets, 6 ounces each
- ¾ cup macadamia nuts, rough chopped
- ¼ cup panko bread crumbs
- ½ teaspoon lemon zest, grated
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 zucchini, julienned
- 1 yellow squash, julienned
- 1 red onion, julienned
- 1 carrot, julienned
- 6 asparagus spears, halved lengthwise
- 1½ cups Thai red curry sauce
Preparation
Preheat oven to 350°F.
Dry mahi-mahi fillets well and season lightly with salt and pepper.
Combine nuts, panko, lemon zest, 1 tablespoon olive oil and a pinch of salt and pepper.
Heat a large, oven-safe sauté pan over medium-high heat. Add 1 tablespoon olive oil to the pan. Lay fillets in pan and cook for 2-3 minutes.
Flip fish over and remove from heat. Top fillets evenly with nut mixture and place in oven for 8-10 minutes, or until the fish is opaque throughout and just beginning to flake.
Heat a medium sauté pan over high heat, add remaining olive oil and then vegetables. Cook 5 minutes, or until tender.
Heat Thai curry sauce in a small pan. Plate sauce, then top with vegetables and mahi-mahi.
