Japanese Beef Curry

This popular Japanese comfort food can also be made with pork or chicken. Serve with steamed white or brown rice to make it a meal.
Ingredients
- 3 cups beef stock
- 1 tablespoon canola oil
- 1 pound beef stew meat, cut into ¾-inch cubes
- Kosher salt, to taste
- Cracked black pepper, to taste
- 2 tablespoons unsalted butter
- 1 teaspoon minced ginger
- 2 cloves garlic, minced
- 1 onion, small diced
- 3 tablespoons all-purpose flour
- 3 tablespoons curry powder
- 1 tablespoon tomato paste
- 1 carrot, roll cut
- 1 russet potato, peeled and cut into wedges
- 1 bay leaf
- 1 teaspoon honey
- 1 tablespoon soy sauce
- Chopped green onions, for garnish (optional)
Preparation
Bring beef stock to a simmer in a small pot. In a separate, larger pot, heat canola oil. Season cubes of stew meat with salt and pepper, then sauté in the large pot over medium-high heat for 2–3 minutes, not cooking through. Remove from heat and set aside.
In the same large pot, add butter, ginger, garlic, and onion and cook for 5 minutes, or until aromatic. Add flour, curry powder, and tomato paste, then stir and cook for a few more minutes. Slowly add the warmed beef stock to this mixture, stirring to avoid lumps. Add carrots, potatoes, bay leaf, and beef, then simmer gently for 30 minutes.
After simmering, add the honey and soy sauce to taste. Serve garnished with chopped green onions, if desired.
