Fried Brussels Sprouts with Pesto

This simple yet flavorful recipe is a great way to combine Brussels sprouts and any extra pesto you may have in the freezer.
Ingredients
- 1½ pounds Brussels sprouts, quartered
- 3 tablespoons pesto
- 1 teaspoon lemon juice
- Salt and pepper to taste
Preparation
Preheat oil to 350°F in fryer or deep-sided pan.
Drop Brussels sprouts into the fryer and cook for approximately 1 minute, or until golden brown.
Toss immediately with pesto, lemon juice and salt and pepper.
