Bacon-Stuffed Jalapeño Poppers

Rich and creamy with just enough spice, these tasty jalapeño poppers are perfect party food!
Ingredients
- 3 cups canola oil (or frying oil of choice)
- 6 jalapeños, halved and cleaned
- 2 slices thick cut bacon, minced
- 8 ounces whipped cream cheese
- 3 tablespoons chives, minced
- 1½ teaspoons black pepper
- 2 eggs
- 1 cup flour
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 cups Panko bread crumbs
Preparation
Heat oil in a pot over medium heat to 350°F.
Halve and clean jalapeños; the more seeds and white ribbing that remain, the spicier they will be.
Cook minced bacon until brown and crisp. Combine cream cheese, bacon, chives and ½ teaspoon pepper in a bowl and mix.
Spoon mixture into jalapeño halves. Place stuffed jalapeños on a cookie sheet and freeze for 30 minutes.
In a bowl, stir eggs. In a separate bowl, season flour with salt and remaining pepper. Place Panko bread crumbs in a third bowl.
Dredge chilled jalapeños in flour, then dip in egg and then in Panko bread crumbs. Place stuffed and breaded jalapeños in oil and fry until golden brown.
