Chocolate Souffle

Ingredients
- Cooking spray, butter flavored
- 2-3 T. superfine sugar, for dusting ramekins
- ⅓ C. superfine sugar
- 5 oz. excellent quality bittersweet chocolate, chopped
- 4 egg yolks
- 6 egg whites
- splash of lemon juice
Preparation
1. Preheat oven to 400 degrees.
2. Spray 4 ramekins thoroughly with cooking spray. Then coat with sugar.
3. Melt chocolate in a double boiler until melted.
4. Remove from heat and whisk in yolks.
5. In a standing mixer, beat whites with a little sugar and lemon juice until soft peaks form. Slowly add remaining sugar and whip to stiff peaks but not dry.
6. Stir 1 C. of whites into the chocolate mixture until smooth.
7. Fold in remaining whites.
8. Portion into ramekins and bake about 20-25 minutes or until tall and crusted on top.
