No-Fail Pie Crust

Ingredients
- 2 c. flour
- Pinch of Salt
- 1 T. Sugar
- 1 c. Butter (2 sticks-refrigerated)
- 6 T. Ice Water
Preparation
Cut butter into cubes. The colder the butter the better.Add flour.
Using your hands, work the flour and butter until the butter is the size of small peas.
Do Not Overwork the dough!
Make an indentation in the middle and add the ice water (no cubes)
Mix together with your hands, just pressing together, NOT Kneading.
It will be flaky and won’t look like it will stay together, but that is good.
Place on floured board and shape into a ball.
When it is pressed together, cut in 2 pieces, make into a disc shape, wrap in plastic and refrigerate for 30-60 min.
After it is chilled, flour board and the dough and roll into 12-13” round
Roll on the rolling pin and then lift and place in a 9” pie pan.
Save the second for the top layer.
