Baked Huevos Rancheros

Ingredients

Preparation
In a sauté pan, sauté onions in canola oil with a pinch of salt for about 3 minutes. Add jalapeños and garlic, then sauté for another 3 minutes. Add tomatoes and green chiles and simmer for 10 minutes. Add a squeeze of lime juice, taste sauce and adjust seasonings as desired.
Preheat oven to 400°F.
From here, you can make individual portions in ramekins or a large, family-style dish in the same pan.
For Individual Portions: Press 1 lightly fried tortilla into each ramekin, then ladle in ¼ cup of sauce. Crack 1 egg into the center, season with salt and pepper and sprinkle with 1 ounce of cheese. Bake for 8–10 minutes, until egg is set but yolk is still runny.
For Family-Style: Line a large baking dish with lightly fried corn tortillas. Cover with tomato sauce, then use the back of a spoon or ladle to make small wells in the sauce. Crack eggs into wells, then season with salt and pepper and sprinkle with cheese. Bake for 10–12 minutes, until eggs are set but yolks are still runny.
Serve with avocado slices and a sprinkle of cilantro.
