Rhubarb & Apple Crisp

These delicious rhubarb desserts are even better served with a scoop of ice cream on top!
Ingredients
Filling:
- 3 cups diced rhubarb (1-inch dice)
- 1 cup diced Granny Smith apple (1-inch dice)
- 1 tablespoon minced ginger
- 1 teaspoon cinnamon
- ⅓ cup brown sugar
- ⅓ cup granulated sugar
- 3 tablespoons cornstarch
- 1 cup apple juice
Topping:
- ¾ cup flour
- ½ cup brown sugar
- ¼ teaspoon salt
- ½ teaspoon cinnamon
- ⅓ cup pecans, toasted and chopped
- 3 ounces butter, softened
Preparation
Preheat oven to 350°F.
Combine all filling ingredients in a sauce pot and bring to gentle simmer over medium heat. Cook until just thickened, then spoon filling into individual baking dishes.
Mix all topping ingredients in a bowl with your hands until evenly incorporated. Crumble topping over filling in each baking dish.
Place baking dishes on a lined baking sheet and bake for 25–30 minutes, or until top is golden brown. Allow to cool 10–15 minutes before serving.
