Spicy Sourdough Cubano

Spice up a classic Cubano with our smoky, housemade Chipotle Aioli, plus roasted red peppers, pickled red onion and cheddar.
Ingredients
- 1 cup cider vinegar
- ¾ cup sugar
- 1 teaspoon whole coriander
- 6 black peppercorns
- ½ teaspoon salt
- 1 red onion, julienned
- 2 slices sourdough
- 2 ounces chipotle aioli
- 2 ounces pork loin, sliced thin
- 2 ounces sliced ham
- 1 ounce roasted red peppers
- 2 ounces sliced cheddar cheese
- ½ ounce arugula
Preparation
Place vinegar, sugar, coriander, peppercorns and salt in a sauce pot and bring to a boil. Strain liquid over the onions and let cool to room temperature.
To build the sandwich, spread chipotle aioli on both slices of sourdough, then layer one slice with pork loin, ham, roasted red peppers, pickled red onion and cheddar cheese. Top with remaining bread slice and heat as you would a classic Cubano (in a panini press or griddle). Add arugula after sandwich is heated through and serve immediately.
