Preparation
Combine beef with all of the dry spices. Heat 2 tablespoons of olive oil to just smoking in a large sauté pan. Sear the beef in batches, transferring to a 4-quart sauce pot when browned on all sides.
Add remaining olive oil to the sauté pan, then add onions and garlic. Sauté until the onions begin to caramelize. Add the tomato paste and cook for 30 seconds.
Deglaze the pan with the beef stock, then transfer contents to the pot with the seared beef. Add the canned tomatoes and bring to a simmer. Cook on low heat, partially covered, for about 4 hours, stirring occasionally.
Adjust seasoning to taste with salt and pepper. Serve with shredded cheese and sour cream or your preferred toppings.
